Founder of Sachère Desserts, an artisanal pastry shop known for its layered cakes, soft ice cream, and subtle Japanese influences, she led her business for over ten years before turning to teaching and consulting. Her practice combines classic European foundations with Asian-inspired flavors, often presented in vegan or gluten-free versions.

I took a few baking and cake decorating classes with Sonya. She welcomes us openly and warmly into her heart and her world. I love being able to taste all the ingredients individually before putting it all together! Making a cake in the real world takes a long time because we have to wait for the layers and frosting to cool - being able to make a cake in 2.5 hours is pretty incredible!

For me, taking a pastry class with Sonya is a bit like having a private guitar lesson with Jimmy Hendrix :) Her lessons are very well structured, you don't feel rushed and Sonya is precise and attentive. With patience and always smiling, she encourages, demonstrates and ensures that we understand the technique. She makes the steps clear, it's rigorous without being intimidating. In the end the result is sophisticated, aesthetic and delicious, and it's with a lot of pride that you leave with your cake, while having learned lots of things. I'm going back as soon as possible!
