Join me in September to discover the art of the Princess Cake, a timeless dessert known for its elegance and delicate layers. Traditionally made and created in Switzerland, this cake is wrapped in pastel green almond paste and filled with chiffon cake, jam, and cream; this refined classic takes a contemporary turn in this hands-on workshop.
We will reinvent it with a homemade raspberry jam, a light and creamy mascarpone whipped cream, as well as a matcha chiffon cake, for a touch of freshness inspired by Japan. You will learn to assemble a dome cake, roll out almond paste with finesse, and balance textures and flavors to create a dessert that is as beautiful as it is delicious.
Whether you are a novice or a baking enthusiast, this workshop will offer you professional techniques in a warm and creative atmosphere. Leave with your own princess cake — reinterpreted with my signature asian twist.
Later in the workshop, you will use tips and pastry bags to decorate your own cake.
Level: Beginner (adults only or children 14 years and older with a parent).
Language: English or French
During the classes, you will:
1 - Bake a matcha chiffon cake base.
2 - Watch a demonstration of raspberry jam (filling).
3- Watch a demonstration of light whipped cream with mascarpone and lemon zest.
4- Make and roll out the almond paste.
6- Assemble and decorate your own cake, using and learning how to work with pastry bags and tips.
